Ingredients

  • 1 Rack of Lamb
  • oil
  • Garlic Powder
  • Onion Powder
  • Thyme
  • Rosemary
  • Salt
  • Pepper

Instructions

  • You will need an air fryer for this recipe. I LOVE my oven type air fryer here in my RV.
  • Prep the Rack of Lamb by removing the silver skin from the bone side of the rack and removing the fatty bits around the tips of the bones if the butcher hasn't already done so.
  • Score only the fat on the top with a lattice of very shallow cuts, taking care to not cut into the meat.
  • Starting on the bone side, drizzle oil over the rack, and then all of the seasonings evenly over the meat.
  • Flip the rack over and drizzle oil over the fat side as well. Top with all of the seasonings, sprinkling each over evenly.
  • Place the rack of lamb in the air fryer on the top rack, leaving room for any sides you also want to cook and then cook at 400°, fat side facing up, for 18-27 minutes.
  • Check internal temp with a meat thermometer to achieve the desired doneness. 120-130 is rare and will take 18-20 minutes. 130-140 is medium rare and will take 20-25 minutes. 145 (my preference) is medium-medium well and will take about 27 minutes or more to reach.
  • Let the rack rest 5-10 minutes before slicing between the bones and serving! Enjoy!
