You will need a pizza dough crust (try my recipe here which makes 2 pizzas worth of dough) spread over a floured pizza cooking tray.
Cook the diced chicken in a greased skillet with a dash of salt and pepper. If you want bacon, cook it now to crispy perfection and crumble it up on a plate or bowl.
To Assemble:
After you've gotten your pizza dough spread out on your floured pizza pan, spread your favorite BBQ sauce all over, leaving a small amount of untouched dough around the exterior for the crust.
Next, add your cooked diced chicken.
Now, spread as much cheese as your heart desires over the top.
Last, sprinkle the bacon and sliced onions over the top.
To Cook:
Option 1: My personal favorite. Prep/turn a smoker on to 450° and cook the pizza for 10-15 minutes until the cheese is melty and browning, and the crust is crisp and golden.
Option 2: Preheat an oven to 450° and bake 10-15 minutes until cooked as specified in option 1. (My oven's sweet spot seems to be around 12 minutes)
Notes
The smoker adds a definite extra depth of flavor to the pizza that the oven just can't replicate. This is the smoker we use.
